EXECUTIVE CHEF


Works with kitchen staff to ensure highest quality food service. Responsible for adhering to food cost and labor budget requirements. Ensures compliance to menus.  Ensures proper food handling and storage procedures, as well as sanitation standards in the kitchen, line, dining room, and snack bar areas.

Coaches, counsels, trains and motivates associates on job specific duties. Trains staff on job processes, techniques, equipment and product usage, as well as safety requirements. Assists associates in prioritizing daily routine work on predicted activity at the unit.

Ensures staff is aware of event sheets, and is following them. Responsible for the timely completion of catering orders. Regularly communications with catering Manager on scheduled events. Ensures food received meets quality standards. Participates in inventory process and ensures products are used in FIFO (first in, first out) process.

Participates in selection, interviewing and performance appraisal of kitchen staff. Participates in customer focus groups. Works with Food Service Director on continuous improvement of services. Reviews and analyzes success of training conducted.

Promotes effective associate communication and fair and equitable treatment of all associates. Demonstrates good communication and listening skills with clients, customers, associates and managers.

Represents Thompson Hospitality professionally and ethically at all times. Complies with Thompson Hospitality’s business conduct policy. Interfaces pro-actively with all support departments. Performs all functions related to merchandising products, menu adherence, service, dining and storage in the unit within the scope of Thompson Hospitality. Performs other related duties as required.

Position reports to Food Service Director. 5 years of experience as a Chef or Sous Chef in a food and beverage operation. Requires hands-on knowledge of all kitchen equipment, workstations and standard recipes. Familiar with food cost control, labor controls and products. Must be able to prioritize requests and handle multiple tasks. Must be flexible and adapt easily to changes in work setting or schedules. Effective oral and written communication skills is required, as well as ability to work with and direct others.
